There are a few things I keep in mind when making salads. First off, it must have all the essential nutrients. Proteins, Carbs, Fats and vitamins. Secondly, colour!!! That's very important even for visual stimulation. So I do at least 4 or 5 colours or as close to that as I can (red, green, purple, orange/yellow).
Tonight i made a mixed mushroom salad with teriyaki tofu and an avocado cilantro dressing.
Slice mushrooms and fry in olive oil over high heat till brown. In a separate bowl, add the spinach, bell peppers, and sliced onion, top with mushrooms and set aside.
Marinade sliced tofu in teriyaki sauce, honey, soy sauce and sesame seeds, add salt and pepper to taste. Leave for 15 - 30 mins. Grill for 15 mins under high heat or till brown. Serve your bowl of salad and top with desired amount of tofu.
(BTW nobody tells you what tofu smells like before you cook it. Yeah, you have to experience it yourself.)
